Description

For the Kabobs

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 cups fresh pineapple chunks
  • 2 red bell peppers, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into large chunks
  • Wooden or metal skewers

BBQ Marinade

  • ½ cup barbecue sauce
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper

Optional Garnishes

 

  • Chopped fresh parsley
  • Fresh cilantro
  • Lime wedges
  • Sesame seeds


Instructions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes.


Step 2

In a large mixing bowl, whisk together the barbecue sauce, olive oil, soy sauce, honey, garlic, smoked paprika, and black pepper.


Step 3

Add the chicken cubes to the marinade.

Toss until evenly coated.

Cover and refrigerate for at least 30 minutes or up to 24 hours.


Step 4

Preheat an outdoor grill to medium-high heat (about 400°F).

Lightly oil the grill grates.


Step 5

Thread the marinated chicken, pineapple, bell peppers, and onion onto skewers, alternating the ingredients.


Step 6

Place the kabobs on the grill.

Cook for 10–12 minutes, turning every 2–3 minutes.


Step 7

During the last 2 minutes of cooking, brush the kabobs with additional barbecue sauce for extra flavor and shine.


Step 8

Remove from the grill once the chicken reaches an internal temperature of 165°F (74°C).

Garnish with parsley or cilantro and serve immediately.
