Ingredients
For the Kabobs

- 3 cups fresh pineapple chunks
- 2 red bell peppers, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 medium red onion, cut into large chunks
- Wooden or metal skewers
BBQ Marinade
- ½ cup barbecue sauce
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- ½ teaspoon black pepper
Optional Garnishes
- Chopped fresh parsley
- Fresh cilantro
- Lime wedges
- Sesame seeds
Instructions
If using wooden skewers, soak them in water for at least 30 minutes.
In a large mixing bowl, whisk together the barbecue sauce, olive oil, soy sauce, honey, garlic, smoked paprika, and black pepper.
Add the chicken cubes to the marinade.
Toss until evenly coated.
Cover and refrigerate for at least 30 minutes or up to 24 hours.
Preheat an outdoor grill to medium-high heat (about 400°F).
Lightly oil the grill grates.
Thread the marinated chicken, pineapple, bell peppers, and onion onto skewers, alternating the ingredients.
Place the kabobs on the grill.
Cook for 10–12 minutes, turning every 2–3 minutes.
During the last 2 minutes of cooking, brush the kabobs with additional barbecue sauce for extra flavor and shine.
Remove from the grill once the chicken reaches an internal temperature of 165°F (74°C).
Garnish with parsley or cilantro and serve immediately.
Notes
- Fresh pineapple caramelizes beautifully and delivers the best flavor.
- Don’t overcook the chicken—it stays juiciest when removed as soon as it reaches 165°F.
- Marinating for several hours creates even more flavor.
- Cut all ingredients into similar-sized pieces for even cooking.
- Rotate the skewers often for beautifully even grill marks.
