Description

Easy Christmas Cranberry Meatballs—juicy meatballs coated in a sweet-tangy cranberry glaze. A fast 25-minute holiday appetizer everyone loves!


Ingredients

For the Meatballs:

  • 1 lb ground meat

  • 1 egg

  • ¼ cup breadcrumbs

  • ¼ cup fresh parsley, chopped

  • ¼ cup pecorino cheese, grated

  • ¼ tsp salt

  • ¼ tsp black pepper

  • 2 tbsp tomato puree

For the Cranberry Sauce:

  • 9 oz whole cranberry sauce

  • ⅓ cup ketchup

  • 3 tbsp sweet Thai chili sauce

  • ⅛ cup water (optional)


Instructions

  1. Preheat oven to 350°F (175°C).

  2. Mix all meatball ingredients in a bowl until combined.

  3. Scoop into 24 portions, roll into balls, and place on a parchment-lined tray.

  4. Bake at 400°F (200°C) for 15 minutes or until cooked through.

  5. In a skillet, stir together cranberry sauce, ketchup, and chili sauce. Simmer. Thin with water if needed.

  6. Add cooked meatballs and coat well.

  7. Serve warm.

Notes

Pecorino adds saltiness; adjust added salt as needed.

Do not use pureed tomatoes.

Makes 24–26 meatballs (4 per serving).

Use thermometer if unsure about doneness.
