Ingredients
Cookies
– ¾ cup butter, cold & cubed
– ¼ cup canola oil
– 1 cup granulated sugar
– ½ cup powdered sugar
– 2 eggs
– 1 tsp vanilla
– 1 tsp cornstarch
– 1 tsp baking soda
– ½ tsp kosher salt
– 1 ½ cups cake flour
– 2 cups all-purpose flour
Vanilla Buttercream
– ¾ cup butter, softened
– 1.5 oz cream cheese, softened
– 3 ¾ cups powdered sugar
– 1.5 tsp vanilla
– ¾–1 ½ tbsp heavy cream
– Christmas sprinkles
Instructions
For the Cookies
1. Beat butter, oil, and sugars until fluffy.
2. Add eggs and vanilla.
3. Combine dry ingredients and mix into the dough.
4. Scoop 3.25 oz cookie balls and flatten to ¾-inch thickness.
5. Chill 30 minutes.
6. Bake at 400°F for 9–10 minutes. Cool completely.
For the Frosting
1. Beat butter and cream cheese until fluffy.
2. Add powdered sugar in two additions.
3. Add vanilla and cream; beat until smooth.
Decorate
Pipe frosting in a swirl and top with sprinkles.
